Loaded Rueben Potato Soup
I’m not a big enjoyer of St. Patrick’s day food (I got sick in 2011 when I was 12 and never got over it) but I saw this recipe on Instagram and had to make it, my mom loves St. Patrick’s day and I wanted to make something for her to enjoy. Its quite a simple recipe with potato, onion, carrots and celery as the vegetables, then you put the meats, corned beef usually although I used regular beef to keep costs down and the taste is basically the same. Also add bacon! I used chicken stock, heavy cream and milk. Add some mustard, Worcestershire sauce, and of course sauerkraut. In the end it came out amazing, my first soup I’ve made myself and it was just perfect the flavors of it all came together perfectly! Don’t forget to top with thousand island!
